Not the fancy kind. Not the ones that take hours or require a pastry degree. Just something warm, buttery, and full of flavor that makes your kitchen smell like fall and your heart feel a little lighter.
That is where these chai spiced cookies come in. They are like your favorite sweater in cookie form, soft, comforting, and just the right amount of spicy sweet. Think cinnamon, cardamom, ginger, and a hint of black pepper. Basically, everything you love about a cozy chai latte baked into a golden little treat.

What You Will Need
Makes: 2 dozen cookies
Prep Time: 15 minutes
Cook Time:35 minutes
-
2 3/4 cups all-purpose flour
-
1 tsp baking soda
-
1 tsp baking powder
-
1/2 tsp salt
-
1 3/4 cups sugar
-
2 1/2 tsp ground cinnamon
-
1 tsp ground ginger
-
1 tsp ground cardamom
-
1/2 tsp ground allspice
-
1/4 tsp ground black pepper
-
2 Tea India Masala Chai Teabags (cut open and use the tea leaves)
-
1 cup unsalted butter, softened
-
1 egg
-
1/2 tsp vanilla extract
How to Make Them
1. Preheat your oven.
Set it to 350°F and line a baking sheet with parchment paper.
2. Whisk the dry ingredients.
In a medium bowl, mix the flour, baking soda, baking powder, and salt. Set aside.
3. Create the chai spice sugar.
In another bowl, combine sugar, cinnamon, ginger, cardamom, allspice, black pepper, and the tea leaves from the Tea India Masala Chai Teabags.
The tea adds a subtle earthy depth that makes the cookies unique.
4. Save some for rolling.
Scoop out about 1/4 cup of the spiced sugar. You will roll the dough balls in this later.
5. Cream the butter and sugar.
Beat the butter with the rest of the spiced sugar until it is smooth, light, and creamy. This is what gives the cookies their perfect texture.
6. Add the wet ingredients.
Add the egg and vanilla extract and beat until everything is fully combined.
7. Bring it all together.
Slowly add the dry ingredients until a soft dough forms. It should smell incredible at this stage. That is the chai magic.
8. Shape and roll.
Roll small portions of dough into balls, then coat them in the reserved spiced sugar.
9. Bake.
Place the dough balls on your baking sheet, leaving space between each one. Bake for 8 to 10 minutes, until the edges turn golden and the centers are set.
10. Cool.
Let the cookies rest for a few minutes, then transfer them to a rack to cool completely.
A Little Extra
Want to take it to the next level?

Make a quick glaze with powdered sugar and a splash of brewed Tea India Masala Chai. Drizzle it over the cooled cookies for an extra layer of chai sweetness. It makes them look bakery worthy and taste even better.
